Deployment of document AI/How to use document AI without sending documents to cloud

Hello All,

I am trying to use the concept of deploying/using the GCP services without sharing my data to cloud. For example for using Document AI I want to parse my passport but do not want to share it with cloud. 
How can i achieve this ? Any leads will be helpful
