Is there any way to disable analytics for specific environments within Organizations?

Unfortunately, this will not be possible. The data is ingested into Analytics DBs from the message-processor and these message-processors are shared between environments. As of now we do not have a mechanism where data pertaining to a specific environment can only be ingested. It happens at the organization level.
