Actually I created a proxy for tests in apigee. I used wizard to configure all for me setting network default. But now I need to change that and use a vpc and subnet created by me. There is a way to remove all resources created by wizard and run it again with my vpc? Or a way to change the environments to set that?

So you are refering to Apigee X provisioning. Yes by default the "default" network is used to perform the provisioning.
If you want to use your own network, then you need re-provision your Apigee X instance and set the network accordingly.
Here is a process you can follow to complete this (you can do all these steps through the Google Cloud Console):
From there you should be able to re-provision an Apigee X instance in the same organization using your custom network.

The Apigee X instance is provisoned in a tenant project that you cannot access - as the solution is managed for you. Basically it consists of a GKE cluster + Apigee installed on it.
When you delete an instance this is what you delete.
Yes, there is a wizard based on the UI that can be used to setup the network configuration to access your Apigee X instance.
Example to provision Apigee X throught the UI (subscription model and paid organization):
