Does the Looker user need to have Explore access to work with the Connected Sheet?

Yes, to create a connection to Looker from Sheets, or to edit an existing pivot table, the user needs the explore permission. (See https://cloud.google.com/looker/docs/connected-sheets for other requirements)

Hello,
Should we use pivot table for any analysis or is it possible to access raw tables and analyse datas within formulas ? 
Also, another one, I can't import sparklines to my Gslides, it looks like it impossible to visualize them. Any hint on this one ?

A user that doesn't have Looker access can see or copy Looker data in sheets?

The user needs to have a Looker account to connect to Looker or edit a pivot table. To just view the sheet that already has data added by someone else, they only need access to the sheet
