Employee deleted emails and it took me more than 30 days to notice

I had an employee delete all emails from the email account that was property of my business, despite the fact that she signed an agreement saying that she would not delete any files. I was going through a health issue and ended up having brain surgery and was not made aware of this happening until more than 30 days after they were deleted (it was about 70 days after). The emails and contacts were a year’s worth of them, and because I was ill, I am out of luck getting the emails back. I think that google should allow an admin a longer period of time to recover proprietary data, as I had no idea that i needed to check behind my employee to see if they had deleted emails. I never would have done anything like this to an employer, so it didn’t occur to me to check.
