Enabling Microsoft Store on Windows Datacenter images?

I have really hard time with the windows with Microsoft Store disabled.

I'm missing basic ingredients, like Ubuntu, winget and HEVC codec. I've search far and wide how to re-enable Microsoft Store with little success.

Any help, anyone?

Unfortunately I don't believe Microsoft support the Microsoft Store in Windows Server of any flavour today, this is not a limitation on the Google side.  Winget also is not supported, although it may be possible to install it on Windows Server 2022 but it is regarded as experimental, see: https://github.com/microsoft/winget-cli#installing-the-client
