I'm being encouraged by my employer to pursue my GCP Associate Cloud Engineer Certification but I'm not sure where to start? I found some preparation courses for the exam on Coursera and other sources but is there anything else anyone can recommend to do alongside those prep courses?

Depends on your budget really. I would look at joining the pluralsight GCP track or Dan Sullivans GCP preparation books/guides. You will also gain some great insight with Qwiklabs hands on labs, some are free and other will cost you anything from 1 credit to 4 credits. Hope this helps
