Can we mask PII in logs before exporting them to a pubsub topic?

I am currently learning how to use GCP, I have a flask app deployed on GKE. I am trying to mask PII data if there is any in the log. I am using pubsub topic to export logs to a third-party app i.e. ELK.  Is there any way we can do it before exporting to pubsub topic? Any help is appreciated.
