I believe you may have Looker Studio confused with Looker, which does offer a customer hosted option?

For Looker Customer hosted installation details, you can reference the Looker Customer-hosted installation steps documentation page.

If you do mean Looker Studio, you can restrict viewer permissions within your organization. For more details, you can reference the Roles and permissions Looker Studio documentation page.
