Custom preset for a dashboard filter

I want to have a predefined collection of custom filter values for a dashboard. Something like configure default value in advanced control type but with multiple default values. 

So for example, you are an owner of a food store. Usually you query stock of 1 item at a time, but weekly need a report by category. For example you may query: apple, orange, carrot, cucumber. And I want a presets: Fruits, Vegetables. How would I go about achieving this? Do I create custom dimension with case or filter inside? any other approaches?

If I understand your use case correctly, yeah I think a separate dimension with a case would be the way to go! Then users could select Fruits to get back all fruits, and/or Vegetables to get all vegetables.
