How can we determine who gave a Document Approval after they left the organisation?

Being able to see who approved a document (or sheet etc) is great. However, when that person has left and their account deleted, it just says "unknown person".

Could this be improved to help us to see who that approved was.

I tried to use the audit log, but it only says that a document was approved, not who approved it.
