Yes, you can. Simply keep your MX records pointed at your current mail server and turn off user access to Gmail, Contacts and Calendar in the Google Admin Console.
Although this is possible, you won't benefit from the Google Workspace's integrated tools that work together to keep your people productive and data safe.
