And is that possible for the all members of a workspace/organization?

This is not possible today natively.
You can set up an automation via API (easiest probably would be AppsScript) that will detect new recordings being uploaded, and move them wherever you choose.

I guess when using an automation, we would need to do it per user and it is not possible to do it for the whole organisation, right?

You can go down the route of setting up a service account with Domain Wide Delegation which essentially will let you perform actions on behalf of the users, programmatically!

This would be helpful to change certain meeting links to a client-specific folder, for example to assist with sharing needs.
