While trying to save the view under a project after running the query in SQL runner, this dailog box appears. However, the projects are listed in an unknown order and there's no option to search for a certain project name either. Is this the default setting for all workplaces or is there some way to add a project search option or at least sort the project names in ascending order?

I agree it's not terribly helpful in an environment with a huge number of projects. There are a couple of ways to give feedback on something like this - one is to use the 'Product Idea' feature within Looker as described here. But I think even more effective is to reach out to the owner of Looker within your own organisation and ask them to reach out to your Looker account team and ask them to create a requirement for this feature.
I have a suspicion that the projects are ordered by the date of creation, and I don't think there's any way to sort them alphabetically, but what you can do is type the first letter of the project name into the project selection box and it will cycle through the projects that start with that letter, which may be helpful.
It doesn't really make sense to sort by creation date. I've been finding my project using the same method you mentioned but there are 100s of other projects starting with the same letter. And if by mistake I miss my project I have to go through the entire process again. This whole process which is supposed to be super easy is soo frustrating.
Is there any way to raise this as a requirement to the concerned team?
