How Can  I show a List of Logged in ( Online ) Users
in the dashboard with a sheet of users in AppSheet?

There are certain things that are impossible and some that may be possible if you explain a little bit better what you expect.

There are no "Usernames" on AppSheet, every log in is via the auth providers available (mainly email).
LogInDate data won't be possible without a really tricky workaround.
OnlineNow is impossible

My Idea is that, I make one menu and when the user clicking to see the main view,
I run one action that set the date for the current user, and then I show one view table that shows the list of users that have the same date of Today.
