How to change action buttons in map form

I want to (for example) delete sms and calls from this action bar (its appear when you click on the geolocation icon), how can I do that?

In your Map view there is a primary datasource (table or slice) being used to to show the map pins.  For that datasource create a Deck View.  It will be used by default for the Map details then you can control what is displayed - including the icons.
