Is there a way to use scandit or another service as an ID Scanner within appsheet to prefill customer data and assist with flow during customer interactions?

Yes, Appsheet has scanning capability.

I can scan a barcode, I have that currently working. I want to scan a drivers license and prefill other fields within the form based on the scan. Is this possible. If so how?

The scan results are just text. Parse it out like any other text values, probably with a combination of INDEXs and SPLITs, maybe some SUBSTITUTEs. Use Initial Value or App Formula to fill the other columns.
