You would want to create a Feature Idea for this.
While we cannot initiate a recording from AppSheet, you can use the File or URL column types to add audio files and then play them from within the app, if I remember correctly.
So you could use the device's recording app to perform the recording and save the audio file. Then from within the AppSheet app, load/attach that saved audio file to some data row. I have never done this so not 100% on the details but do know it can be done.
