We are working with one of the 3rd party partner interconnect vendors to setup hybrid connectivity between On-Prem and GCP. I see 2 options here - Partner Interconnect and Cross Cloud Interconnect. Both seem to support hybrid connectivity but with Cross Cloud Interconnect the network design is a bit different meaning a hub/spoke model and documentation is not clear with On-Prem connectivity as is the connectivity with other cloud providers though i fully understand that its use case is more targeted towards other cloud providers. However I am interested in the hybrid connectivity option.

In GCP, we have 3 options for hybrid connectivity ,
1) Dedicated Interconnect
2) Partner Interconnect
3) Cross-Cloud Interconnect
As per your requirement, we can omit option 3 cause it is meant for connecting with other cloud service provider
Dedicated Interconnect will be provided to you by connecting a new fiber to your equipment which act as a dedicated network
Partner Interconnect will be provided to you by your ISP provider , Google has list of ISP providers for each region you can choose from the list.
IMO , you can go with either of these.

Cross-Cloud Interconnect has also an hybrid connectivity option with GCP as the hub and on-prem and other cloud providers as the spokes

In Cross-Cloud Interconnect we dont have on-premises environment, this type of interconnect is meant for establisihing connections with other cloud providers, please find the below link for your reference,
