How to Edit default Font Sizes in Edit Theme and Layout?

It seems as though a lot of the default styles for various components in Looker Studio are simply not included in the Edit Theme and Layout Panel. Font sizes are missing from everything. While I can select The Font Style and Colour for a Primary Style, there are no overrides for specific parts of different data tiles.

For example, When I add a scorecard, I go into the settings for that Scorecard and make the main font much bigger. I also turn on the Title, and set the Title font to display at the bottom, and change the font size smaller. But in the edit theme panel, I can't even change the font size for ALL components, let alone specifically the Scorecard.

Another major annoyance, is that If I set the Component Background to White - it applies a white background to everything, including images I've uploaded. The images specfically need to be transparent since they are usually PNG icons. So it appears If I make the Default Theme Component background White, then I have to manually override all the images. If I set the Default Theme Component background Transparent, then I have to manually override every single component box?

Is this really how the Theme Editor works? 
Not sure why it's called a Theme Editor if you can't really apply defaults to the Whole Theme.

You are correct - as noted on the Theme documentation page, themes in Studio only apply to colors, font style, and borders. You can override individual components with the Style panel options int he Properties panel for each chart, as you have noted.
