I have created a report in Looker with a data source that is a Google Sheet. When I try to update this data source with another more updated Google Sheet, I have to update all the created charts as well as the calculated fields. Both google sheets have the same format in the fields and their names are the same. Is there an option to replace a data source (Google Sheet) with a more updated one without having to update all the charts that rely on that data source?

Assuming you mean Looker Studio, not Looker...The simplest thing to do would be to just copy and paste the updated data into the Sheet tab you are using as your report data source (making sure all the headers are exactly the same OR don't touch the headers and just paste in the data.)
There are also a number of options in BQ/GCP but if you want to stick with Sheets, this is your most straightforward option.
