I'm working on simplifying things to my team by creating a playbook to grab information from cases "events" and put them on a custom view. But I'm not sure how to do it. I can't find anything help me understand this process from documentation. I have attached sample screenshots for what I'm trying to achieve here.

What you're looking for are called "placeholders," which allow you to pull data from events and use them in actions/views. To trigger it, you'll click the [ ] to the right of the Value and you'll get a dialog where you can now choose event fields. It looks like this.
