Is there any reason (beneficial or not beneficial) to "Save as Google Docs" after uploading a Word document to GDrive? Same question for Excel/Sheets, PowerPoint/Slides, etc.
Because I like to see my directory structures clean, I automatically convert any Microsoft documents into GSuite (so I don't have to see the .docx etc extensions). But I'm wondering, when dealing with others around me who are also contributing to GDrives, whether it's worth the argument to have them also "Save as Google Docs" when I don't have a good answer for them as to why it would be nice for them to do these conversions.
My other goal in getting others to begin doing conversions when they upload MS docs, is to encourage them to no longer use MS, and I feel that if they continue to see the MS extensions, they will revert to their old/undesirable habits lol

I agree with your intention of wanting to discourage the continued use of Word (MS Office). Though it's certainly possible for users to download a Google Doc to a Word format and work on it offline, not seeing the Office filename extension and the extra steps involved in getting a Word format, are likely strong incentives to just edit the Google Doc online.
Another immediate benefit that comes to mind is the Google Docs Version history. It might be helpful to have step included after the initial conversion to name the version such that it indicates the original upload from Word. This might be helpful going forward with the documents.
Finally, it doesn't appear that the Activity Dashboard is available for non-G Docs. I could be in error, but that's what I observed with a quick test.
