This may have already been discussed, but I would like to know if there is a way to edit as plain text in Google Docs.
I understand that I can use add-ons such as StackEdit to edit in plain text, but I would like to edit in Docs for the following reasons.
* I use multiple GWS organization accounts, and adding add-ons to all of them would be a hassle.
* In some cases, accounts loaned to us by customers prohibit the addition of add-ons.
A specific use case is when AppSheet Automation generates a CSV file for backup and I want to modify the template file.
AppSheet generates templates for CSV files as plain text files.
You can not edit in plain text. Google Docs will always apply the default styling to your text. However, you can download any document as a plain text file:
File menu > Download > Plain Text
This will result in a plain text file. Hope this helps.

Yes, as you pointed out, currently the only way is to modify the downloaded file and re-upload it, or use a 3rd party Editor add-on.
However, this is a workaround that we would like to avoid in the Cloud era.
I am thinking that if Plain text is opened in Google Docs, there should be an option to save it as Plain text.
For example, just as an Excel file can now be opened as Excel and saved as an Excel file, I would like the same thing to happen with text files.
