I have dates in 2 columns, I want to calculate the difference the two in days…how do I achieve this.

The rest of it is pure math, in my opinion.
Maybe something like:

TOTALHOURS([Date2] - [Date1]) / 24
-
(TOTALHOURS([Date2] - [Date1]) / 24)/7

(2nd part: count how many weeks, thus sundays, have been in the timeslot)
