When I change the app to a new version, I want to sync every time the app is opened so that the user doesn't use the old version.
"The Sync on start" feature under "Offline/Sync" says Sync data every time the app starts to make sure the user has the latest data.
However, even if I tap the app on my smartphone to open it, it will not sync every time.
What does the app starts mean?

You can use - pull screen down (in android) to refresh the app, releasing will synchronize the app

"Tap the app on my phone" means tap the Appsheet app from the home screen as shown in the image.
You can create shortcut for each app in your home screen, I believe iOS will support this option
