Hi, we have an app that we require to share with colleagues outside of our Google Workspace.
These colleagues do not have accounts related to any of the authenticated sign-in partners, however we do require to give these users access to certain parts of the app according to their e-mail address.

I come across this a bit. So everyone has either an Android phone or an iPhone. You can't have these without also having a gmail or icloud type email. So this probably a case of users not wanting to use their personal emails to login.
If they are really adamant then just suggest to them they setup a free gmail account.

They have their own domains which is the issue; we've already set up gmail accounts as an interim solution but it seems astonishingly short-sighted not to be able to set up up access rights for specific e-mail addresses.

Then you would need to have domain authentication like AWS Cognito, Google Group, Active Directory etc. Though that needs AppSheet Enterprise Standard subscription.
So, with Enterprise Standard we'd be able to add different e-mail addresses for sign-in?
