You can use the Documentation field of the alert policy to include any

Unfortunately it's not possible to customize the contents of the
notification body. With that said, coming in 2023 you'll be able to
customize the subject line and we can share more in this thread when
it's available. Stay tuned.
This is now possible through the API, you can reference the log data
dynamically in the notification payload:

You can select the Pub/Sub notification channel and then send the alert
policy to any 3rd party application. Here is a a blog post that walks
